The Storm blades have insta-charge and you can still block and parry the same. If you use the shield with 'health on parry' and learn to parry well, along with all of the combat abilities, the dual blades can be useful. I also use the cursed spear as back up if I'm overwhelmed. true.
The one thing I'll say for the default scheme is that it makes it slightly easier to hold down the heavy attack to charge it while dodging around at the same time. It takes time to get used to it. The only attacks you cannot parry are those which are highlited with red. Later when you aquire appropriate skills, if somebody shoots arrows at you or throw daggers you'll be able to shoot and throw them back if you parry them. I really enjoyed using this skill. 1.

Yes it did. Removing it was a huge mistake to me. In a game where you can get swarmed, being able to have some type of counter and kill is a necessity to me. Now that you can only parry and do a hack and slash 20 times until an enemy that is just a normal man, it makes the combat less exciting and more of a chore.
The biggest problem you're going to have if you start with Origins and like it so much you want to go back and play the old ones, is that Origins plays completely different than any other AC in the series. It's an RPG, every other AC game is an Action game.
